Marble Cookies Recipe

One of my favorite traditions at Christmas has been a yearly delivery from a few of the younger women at our church that my husband and I have invested in. These girls get together every holiday with one of the grandma's and they bake cookies and fudge and holiday treats that they package up and deliver in a tin just when you least expect it! Seeing the girls at the door is usually a break from the rush of holiday chaos our family is usually in. This past summer one of those girls became a wife, and the other is darn near close. The annual cookie delivery tradition has taken a little break, at least from those two girls who are now figuring out what life looks like as adults. Perhaps it's something I should start up with my kids.  If you need a cookie to exchange at your cookie exchange, or a dessert to bring that can be easily munched on this season, consider making these marble cookies. They are delicious!

Marble Cookies

Ingredients:
1 Cup all-purpose flour
1/4 Tsp baking powder
1/8 Tsp salt
1/4 Cup softened butter
1/2 Cup granulated sugar
1 Large egg
1/2 Tsp vanilla extract
1 Tbsp cocoa powder
1/2 Cup melted chocolate

Directions
In a medium bowl sift the flour, baking powder, and salt.
Mix the butter and sugar with an electric mixer until light and fluffy.
Add in the egg and vanilla extract and blend well.
Pour in the flour mixture, mixing until well combined.
Remove half the dough and put to the side.

Whisk together the cocoa powder and the melted chocolate.
Add the chocolate mixture to the other half of the dough and lightly blend.
Divide the chocolate and vanilla pieces into about 6 pieces each.
Create marble effect by alternating chocolate and vanilla pieces.

On a lightly floured surface, roll out the dough and shape it into a log. For bite-size cookies make a 9-inch log with a circumference of about  1-inch.
Wrap dough in plastic and chill for 1 hour and a half.
Preheat oven to 350 degrees.
Line a baking tray with parchment paper.
Cut dough width-wise into 1/4-inch slices.
Bake for 8 minutes or until edges start to lightly brown.
Remove and let cool.
Serve and enjoy.

Tips
Pick up a nice lemony flavour by adding 1/2 tsp of lemon zest.
