Bacon Cheese Soup

potato soup

Ingredients
½ Pound bacon, chopped
2 Onions, chopped
1 Cup fresh or frozen corn
1 Tbsp garlic powder
½ Cup chicken broth
½ Cup flour
1 Cup heavy cream
2 Cups shredded cheddar cheese
½ Cup shredded swiss cheese
Salt and white pepper to taste

Directions
In a pot fry the bacon, remove and set aside.
In the same pot saute the onions, corn, and garlic for 3 minutes.
Incorporate the chicken broth, flour, salt, and pepper.
Stir well and simmer for 10 minutes.

Add the heavy cream, bacon, and cheese, and cook for 5 more minutes.
Serve in bowls, top with more bacon, and enjoy.

Tips
For a spicy kick add 2 tsps of Sriracha sauce or jalapenos {or both!} into the soup. For a more filling soup, quarter a few pounds of red potatoes and add them to the soup.
