Shrimp Hobo Foil Dinner Recipe

One of my most vivid memories as a kid was going to sleep away camp. For the first time ever, I made a meal in foil and cooked it over the campfire. I was so proud of that meal. Pretty sure it was the first thing in my life I had ever cooked. Fast forward now and I've made plenty of meals now, but my favorites are the ones that can be made in one dish, either over the fire in a foil packet or in a sheet pan. This shrimp hobo foil dinner is not only easy to make, it's the perfect summer meal for camping or for an easy clean up backyard BBQ meal. Come get the recipe and put it on your summer list!

Shrimp Hobo Foil Dinner Recipe

Ingredients for Shrimp Hobo Foil Dinner


2 ears corn, sliced into 1-inch thick rounds 
1 package (4 oz) Cajun sausage links, sliced into 1/4-inch thick slices 
1 lb large shrimp, peeled 
1 large onion, chopped 
1 Red bell pepper, chopped 
1 Green bell pepper, chopped 
2 Tbsp fresh lemon juice 
2 tbsp. minced garlic 


How to get your BBQ grill started


Start by getting your charcoal BBQ grill ready. You can do this easily with the HomeRight ElectroLight Fire Starter. It's the only way I will use my charcoal BBQ because it's heated and ready to go in 2-3 minutes! The ElectoLight Fire Starter totally eliminates the need for lighter fluid!

Stack your charcoal briquettes, touch the tip of your ElectroLight Fire Starter to the briquettes and pull the trigger. It's as easy as that!


Once you see a spark, pull the tip back and let the blower fan the flames. Your briquettes will start to turn white indicating that they are warm and ready to cook!



You'll be making two foil packets to cook.

Cut 8 sheets Reynolds Wrap Heavy Duty Aluminum Foil. Use four sheets of foil per packet. Prepare your corn, peppers, and sausage.

Divide the onions, and peppers among each of the four double lined foil sheets. Follow them with the corn, sausage and shrimp.



In a small bowl stir in lemon juice, Old bay seasoning and garlic.

Divide old bay sauce among packets drizzling about 2 Tbsp evenly over each.

Sprinkle each with about 1/2 tsp of the Cajun seasoning.

Wrap up sides of the inner foil squares.

Now fold over the outer 2 layers to seal.
Crimp edges to seal the foil, then place second sheet going opposite length and wrap while crimping edges to seal.

Grill sealed side up about 12 - 15 minutes.
