Homemade Chipwich: Chocolate Chip Ice Cream Sandwiches

Ice cream is my love language and summer is the perfect time to speak it. I also love chocolate, so what better way to combine all my loves and create these homemade Chipwich ice cream sandwich cookies I remember loving as a kid. Not only are these homemade Chipwich sandwiches easy to make, they are also pretty much everyone's favorite. Nothing beats a homemade chocolate chip cookie except maybe when it's sandwiched with some ice cream in the middle and then rolled in chocolate chips. Come check out this easy recipe.




 Chocolate Chip Ice Cream Sandwiches




The ingredients for these homemade Chipwich ice cream sandwiches are pretty basic. You probably even have them in your pantry right now.


Unsalted, softened butter always makes the best cookie dough, so make sure you get your butter to room temperature before making these cookies.


You don't want to overmix cookie dough or it will become hard.



You can use food coloring to dye parts of the cookie to make it more festive for your event.


If your dough is warm after mixing, you will want to chill it before cutting and cooking it.




Homemade Chipwich ice cream sandwich cookies

ingredients:

* 1 1/2 cups all-purpose flour see notes below
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1/2 cup unsalted butter see notes below, room temperature
* 1/2 cup firmly packed light brown sugar
* 6 tablespoons granulated sugar
* 1 large egg
* 1 teaspoon vanilla extract
* 2 1/4 cups semisweet chocolate chips
Red and blue food coloring
Vanilla ice cream

instructions:

Directions
Preheat the oven to 350°F and line 2 baking sheets with parchment .In a medium bowl, sift the flour, baking soda and salt together.
In another large bowl, using an electric mixer at medium speed, beat together the butter, and sugars about 2 minutes until it is smooth. Add the egg and vanilla and mix on low speed until mixed in. Gradually add the flour mixture and mix in until just incorporated. Do not keep mixing - do not overmix.
Add chocolate chips and stir with a wooden spoon, again no overmixing, just until incorporated. Chill dough if dough is warm.

Divide the dough in half, now divide one of the halves in half again. Put the red food coloring into one of the halves and mix till incorporated. Do the same with the blue coloring. Taking the uncolored mixture, place it on a piece of clear wrap and place blue on one side and red on the other. Using the wrap roll into a cylinder and place into the refrigerator to cool for 30 min. 

Once the cookies are cooled take out and slice cookies. Bake the cookies, cookies should be brown around the edges and should take 12-14 min to bake. Once cooled I placed s scoop of vanilla ice cream on one cookie and sandwiched it with another. 

Decorate with sprinkles or chocolate chips
