My husband {God bless him} is such a creature of habit. He's taken a ham and cheese sandwich, chips and a cookie to work with him nearly every single day of his employed life. Earlier this year, he switched jobs for the first time in nearly two decades and nearly every day since, I've heard about one of the guys in his group. I don't hear about his because he's a great engineer {though I'm sure he is}, or because he's been helpful to my husband in his new transition {though I'd venture a guess that he has}, nope, I hear about him because of his lunch. 

You see, my husband in all his years, has not grown tired of bringing a sandwich to work with him. In fact, he loves sandwiches. But I do think he's gotten tired of how boring his is because this guy at work is some kind of a sandwich genius and I've been hearing all about it! So I thought I'd help my husband come up with some new sandwich ideas to bring with him to work. That way, he doesn't just have to be jealous of the awesome sandwich co-worker guy and maybe, just maybe, when he brings along this grilled pesto ham and provolone sandwich, co-worker guy might just be a little jealous of him.

Grilled Pesto Ham and Provolone Sandwich

Yield: 4

Grilled Pesto Ham and Provolone Sandwich

An Italian-style sandwich with zesty flavors.
prep time: 5 mins cook time: 5 mins total time: 10 mins

ingredients:

8 slices of Eckrich Deli Meat (I used Eckrich Ham off the bone)
2 tablespoons of mayonnaise
4 teaspoons of prepared pesto
8 slices of sourdough bread
1/2 cup loosely packed basil leaves or lettuce
4 sweet peppers, chopped 
3 sliced tomatos
8 slices of provolone cheese
2 tablespoons of butter, softened

instructions

In a small bowl, mix mayonnaise and pesto; spread over four slices of bread. Layer with ham, lettuce, peppers, tomato and cheese. Top with remaining bread. Spread outside of sandwich with butter.

On a griddle or panini maker, toast sandwiches over medium heat for 2-3 minutes on each side or until golden brown and cheese is melted.

This pesto spread is delicious! You can substitute low-fat mayo for a lighter alternative.

Not only does it save us money {those lunches out can add up!}, but it saves him time and allows him to relax a bit during his hectic day. He doesn't have to rush to beat a clock to get back to work during lunch hour, which is a good thing because traffic can be horrible!

We all love sandwiches so much that we often have a sandwich night for dinner. It's a huge time saver during our busy week. That way, I can spend less time in the kitchen and more time with my family.

I pick up Eckrich Deli Meat at my local Walmart deli counter when I'm doing all my other weekly shopping. You can have your Eckrich Deli Meat at the deli counter sliced any way you want, so sometimes, I will pick up thicker slices so that I can add Eckrich ham to some of my other dishes. It's my little shortcut in the kitchen since the meat is fully cooked.
