Cheese and Spinach Tortellini Soup


Soup is something my family can expect on having at least once a week in our house. I'm constantly cold and the long dreary rainy days of winter in the Pacific Northwest create this bone chilling cold that only coffee and warm soup can take the edge off of. One of our family favorites is this cheese and spinach tortellini soup. It's packed full of wholesome vegetables and freshly made Buitoni pasta. Some soups take a long time to make, but not this one. This one can be made in about half an hour so your busy family can move on to their next activity. 


Cheese and Spinach Tortellini Soup


Long ago, my husband's great grandfather Silvio was born to {what they suspect to be} a young, unmarried woman. Silvio was left on the doorstep of a church and the women who found him took him in. They rocked him and as they rocked him they would say "ti adoro" which means I adore you. As family legend has it, he took on the last name of Teodoro. My father-in-law is full Italian so family celebrations looked a little bit differently than mine did growing up. Really, the biggest difference was the fact that at every holiday meal Grandma would have pasta and meatballs. If it's Easter and you have ham, you also have a side of meatballs. Your Thanksgiving turkey came with a side of meatballs, Christmas...well, you guessed it, pasta and a side of meatballs. I'm a huge fan of pasta, in fact, I would say that it's probably one of my favorite foods, so I fit right in! 

As a busy mom with kids involved in sports and after school activities, it's important to me to have a family meal {a non-negotiable for us} before we rush off. Pasta is a quick and easy meal that everyone in our family likes. Which is why I reach for the Buitoni brand. You can use Buitoni products in a variety of ways, I'm just sharing one way that our family enjoys it and that's in this Cheese and Spinach Tortellini Soup.

Ingredients:

2 T. olive oil
1 large chopped onion
3-4 carrots chopped
5 stalks of celery chopped
3 cloves of garlic
10 cups of chicken stock
1/2 bag of fresh spinach
1 container of Buitoni Three Cheese Tortellini {20 oz.}
2 cans of diced tomatoes 
1 T. balsamic vinegar
1-2 T. honey
salt and pepper to taste

Saute the onions, celery and carrots in olive oil for around 5 minutes or until the onions are translucent. Add in the diced garlic and saute for a few more minutes. Add in your chicken stock, tortellini, tomatoes, spinach, vinegar and honey. Bring it to a boil and then reduce your heat and simmer until your pasta is tender {around 10 minutes}.

I like to serve the soup with grated Parmesan on top and with yummy homemade yeast rolls.

My whole family eats this wholesome soup. What's even better is the Buitoni pasta is freshly made using fresh ingredients as well.
