Stir fry is a great way to use up fresh produce that might be on its last leg wilting in your fridge. We eat it often as a way to clean out the fridge because the recipe is usually very forgiving, simply use what you have on hand.

  • Prep all of your ingredients before turning on the heat. Things move fast when you are cooking your stir fry, so make sure you are ready for it!

  • Cook low and slow! Make sure the heat isn't turned up too high when you are cooking things like minced garlic or ginger.

  • Make a plan! Certain ingredients in your stir fry will need to be cooked for various lengths of time. For instance, your chicken will need to be cooked for longer than some of your vegetables. So make sure you plan accordingly.

  • Don't be afraid to set ingredients aside. It's ok to cook your chicken and then put it on a plate while you cook the other items. Add all the ingredients in together at the end for one delicious flavor.

  • Want to thicken your sauce? Corn starch is a great way to thicken any sauce, just make sure you stir it in well and make sure you get out all the lumps.

Pineapple Chicken Stirfry

Ingredients:
  • 2 tablespoons olive oil, divided
  • 2 pounds boneless skinless chicken thighs, cut into 1-inch pieces
  • Salt and black pepper, to taste
  • 1 small onion, cut into 1-inch pieces
  • 1 red bell pepper, seeded and cut into 1-inch pieces
  • 2 cups broccoli florets
  • 1 clove garlic, minced
  • 1 (20 ounce) can pineapple chunks in juice, juice reserved
  • ¼ teaspoon minced ginger
  • ¼ cup liquid aminos or soy sauce
  • ⅓ cup chicken broth
  • ⅓ cup gluten-free hoisin sauce
  • ¼ cup brown sugar
  • 2 teaspoons cornstarch

How to cook Pineapple Chicken Stirfry


  1. In a large (12 inch) skillet over medium-high heat, pour 1 tablespoon olive oil and heat until it shimmers. Season chicken with salt and pepper. Brown chicken on all sides until cooked through, about 8 minutes. Remove from the skillet and keep warm.
  2. To the skillet, add the remaining oil. Then add the onion, bell pepper, and broccoli. Cook for 5 to 8 minutes or until the vegetables begin to soften slightly. Stir in the garlic.
  3. Return the chicken to the skillet with the vegetables.
  4. In a small bowl, whisk together the pineapple juice, ginger, liquid aminos, chicken broth, hoisin sauce, brown sugar, and cornstarch. Pour over the chicken and vegetables.
  5. Bring to a boil and cook for 2 to 3 minutes or until the sauce begins to thicken.
  6. Add the pineapple chunks to the skillet and heat through.
  7. Serve over rice garnished with sliced green onions.
