Homemade Ice Cream Cake

My oldest son LOVES ice cream cakes. And I must say, he has pretty good taste. I love them too! My big guy turned 13 (gasp!!!) this month and requested an ice cream cake for him and his friends. They are so darn expensive at the store, so here is my tried and true recipe for a quick, easy and delicious ice cream cake.


The secret? Ice cream sandwiches. I buy a big box of 24, but you really only need around 20 sandwiches.

Layer them in the bottom of a 9x13 pan. You can even squish more in there if you want, but as a base layer, the 9 1/2 sandwiches is plenty.


Over the top of the sandwiches I layered some caramel sauce (I had a squeeze bottle and used about 1/4 cup drizzled on top), then microwaved 1 jar of hot fudge sauce for 30 seconds (until you can pour it easily) and used half the jar of sauce on top of the sandwiches.


Then you take 1 tub of cool whip topping thawed and smooth half of the tub on top of the sandwiches.


Layer 9 1/2 more sandwiches on top.


And repeat with the process of caramel sauce and the rest of the jar of hot fudge sauce.


Finish with the cool whip topping on the top, then put sprinkles on top. Freeze until ready.


That's it! Easy, quick and so yummy!
