Homemade Chocolate Strawberry Pudding

While I must confess to buying store-bought puddings from time to time, there is nothing like homemade pudding to satisfy that sweet tooth! And really, it's not too difficult to make either. It's one of the easiest and quickest desserts that you can make at home and it travels fairly well so you can bring it along with you to a pot luck or for that perfect fall picnic at the park.

The possibilities are endless too! You can add many different variations and make chocolate pudding parfaits just by adding a layer of graham crackers, cookie crumbs or sprinkles to the bottom or by toasting a marshmallow or adding chocolate shavings on the top.

Ingredients

1 Cup milk
3 Tbsps cornstarch
½ Cup sliced strawberries
2 Eggs yolk
3 Tbsps brown sugar
2 Tbsps cacao powder
Whipped cream to taste
Strawberries, for topping


Directions

In a medium saucepan over medium-high heat, mix the milk, cornstarch, eggs, sugar, and cacao powder.
Stir and cook until the first bubble forms.
Reduce to low heat and incorporate the strawberries.
Stir for 1 more minute, and transfer to a bowl.

Refrigerate for 4 hours.
Serve into tall glasses.
Top with whipped cream and strawberries.
Enjoy.


For a dairy free version, use almond milk.

You can also freeze these and make chocolate strawberry pudding pops. I love using these molds.
