Harvest Turkey Chili

I'm always cold during the fall and winter, which is why some form of soup, stew or chili is part of our weekly dinner rotation. Not only does it allow you to use up ingredients that you may have in your refrigerator or pantry, but I almost always have the ingredients on hand since so many of the ingredients are staples in my home. When meat is on sale, I always cut up, dice up or brown portions that are perfect as soup additions so that it helps the dinner making process go that much quicker. This harvest turkey chili is the perfect fall soup that will warm you up from the inside!

Ingredients
1 1/2 lbs lean ground turkey
2 Tbsps canola oil
1/4 Cup diced onions
1/2 Cup pinto beans
1/4 Cup diced tomatoes
1 Cup corn
3 Tbsps chili powder
Salt and pepper to taste
1/4 Cup Sweet potato diced
2 Rosemary sprigs

Directions
Boil sweet potato until tender all the way through then dice it.
Heat oil in a large pot over medium heat.
Add in the ground turkey until brown on all sides.

Stir in the onions and beans and cook until fragrant.
Reduce heat and add in the tomatoes, corn, and 2 tbsp chilli powder.
Salt and pepper to taste.

Place in desired dish and add the sweet potatoes on top.
Garnish with remaining tbsp of chilli powder and rosemary sprigs in the center.
Serve and enjoy.

Tips
Pinto beans can be substituted with white beans for a milder bean flavor.
