One Dish Sheet Pan Chicken and Veggie Recipe

Where have one dish sheet pan recipes been all my life? Why am I just now discovering them?! Please tell me you are totally on the bandwagon and driving down sheet pan highway 101, because if you aren't sister, you need to hop on! There is nothing better than getting everything prepped and then putting one dish in the oven to cook. Nothing. Except maybe a cold drink on a hot day but I digress. I've got a delicious one dish sheet pan chicken and vegetable recipe that your whole family will love. It will save your booty on a weeknight when you aren't quite sure what you should make for dinner and it's fancy enough to serve to guests. Jump on board friends and come get this recipe!






One Dish Sheet Pan Chicken and Vegetable Recipe



Ingredients
1-4 boneless chicken breasts
6 carrots
1 zucchini
1 yellow squash
2 cups broccoli
2 cups cauliflower
olive oil
applewood rub or dry seasoning of your choice
salt, pepper


Directions

On a large baking sheet, cover with foil. Coat both sides of chicken breasts with olive oil 


Chop all vegetables into bite sized pieces. 


Mix together in large bowl. Drizzle with olive oil, salt and applewood rub. Toss in bowl to even coat veggies.



Rub your chicken with Applewood seasoning. Be generous. This stuff is delicious! Lay out on pan, leaving spaces in between each one.



Place veggies in between and around chicken.




Place in preheated oven. Bake at 400 degrees for about 20 mins. Or until chicken is 165 degrees internally and inside of chicken is no longer pink.



Serve up and enjoy!
