Garlic and Lemon Roasted Cauliflower Rice

A healthy side dish that compliments lemon herb chicken.

prep time: 5 minscook time: 25 minstotal time: 30 mins


16 oz bag riced cauliflower
1 tablespoon olive oil

4 cloves of garlic, chopped

1/2 teaspoon salt

2 teaspoons fresh chopped parsley

1 1/2 teaspoon fresh lemon juice


Preheat your oven to 400 degrees. Spray a large sheet pan with oil or line with non-stick baking sheet.

Combine the riced cauliflower, olive oil, garlic and salt together in a large bowl stirring well. Pour onto prepared sheet pan and spread out in a single layer. 

Roast in the oven for 25 minutes, mixing halfway through until golden brown.

Remove from the oven and top with fresh lemon juice and parsley.
