S'mores Granola Bars {with Vegan and Dairy Free Options}

S'mores should probably have their own drop down tab on my blog. I kind of like them. A lot. But what's not to like? You've got chocolate and marshmallow and it's all kinds of delicious. Plus there are so many different variations of them. This one has tips on how you can make them vegan and dairy free. I mean, it's practically a health food then right? Come get this yummy s'mores granola bar recipe. You are going to love them!

S'mores Granola Bars

prep time: 10 mins cook time: 10 mins total time: 20 mins
An easy 7 ingredient on the go snack you can make vegan and/or dairy free

ingredients:

2 cup toasted oats
¼ cup honey
¼ cup brown rice syrup
⅓ cup almond butter
1 cup of heaping mini marshmallows
½ cup mini chocolate chips
Pinch of salt

Optional
¼ cup chopped walnuts

instructions:


Toast 2 cups of oats in a pan on the stove, keeping a good eye on them so they don’t burn. About 5-10 minutes on Medium High.

In a microwave safe bowl combine almond butter, brown rice syrup and honey. Microwave in 30 second intervals and stirring in between until fully melted and pourable. Let cool a little bit. (but not all the way because the heat makes for ooey gooey granola bars!)

In a large mixing bowl combine oats, marshmallows, chocolate chips and salt.

Line a square 8” pyrex glass dish with parchment. The larger your dish the thinner the bars will be. Pick the best dish you have on hand to make the size granola bars you would like.

Pour the melted almond butter, brown rice syrup and honey over the dry ingredients and mix well. They will be melty and gooey and it’s exactly what we want.

Transfer your granola bar mixture into your parchment lined baking dish.
Put in the fridge for 20 minutes.
Remove bars from fridge and from the parchment and cut in desired size.

You can use vegan marshmallows like Dandies. You can find them here. You can also find them in your local Whole Foods or Trader Joe's.

You can also use dairy free, nut free and soy free chocolate chips like these in your recipe.

If you want extra marshmallows you can add them to the top of the bar. Broil them until they are nice and melty and crispy just like your favorite s'mores treat over the campfire!

You can even make extra s'mores granola bars and gift them for the holidays. Wouldn't they make a great treat to give to friends and neighbors? Wrap them in a little craft paper and tied them with twine. You can't go wrong with these s'mores granola bars.
