S'mores are everyone's favorite! I know they are mine! I love easy to make treats that can be semi-homemade if I don't have as much time, or made from scratch if I do! This S' mores Ice Cream Sandwich is the perfect treat. The combination of chocolate, graham cracker, and toasted marshmallow will have everyone swooning. Use pre-made cookie dough, or make your own! Either way, no campfire needed! Enjoy this easy to make S' mores ice cream sandwich recipe.

S'mores Ice Cream Sandwiches

Want an easy ice cream sandwich recipe? Look no further! This recipe is one of my favorites because it's semi-homemade but still tastes delicious, which means less time in the kitchen and more time doing what you really want to be doing!

If you want to really go all out, you can make your own cookie dough and even your own ice cream and fudge sauce, but if you want to save some time, feel free to buy the ingredients and whip them up and save yourself some time!

Yield: 12-18

S'mores Ice Cream Sandwiches

Toasted marshmallows on a sugar cookie drizzled with chocolate and stuffed with ice cream make the perfect ice cream s'mores treat!


  • Sugar cookie dough (buy it pre-made or make your own)
  • 2 graham crackers (crushed)
  • ½ tsp cinnamon
  • 1 tbsp sugar
  • 8-10 marshmallows ( cut in half)
  • Half of a container of vanilla ice cream
  • Chocolate sauce or chocolate fudge


How to cook S'mores Ice Cream Sandwiches

  1. Preheat oven (If using store-bought dough use manufacturer directions)
  2. Slice dough ¼" slices
  3. Mix cinnamon and sugar in a small bowl and set aside
  4. Sprinkle top with graham cracker crumbs. Add a sprinkle of the cinnamon sugar mixture
  5. Cook according to cookie directions ( I cooked mine for 10 min )
  6. Take out of the oven and allow to cool on a wire rack
  7. Once cool place 2 of the marshmallows on a cookie. Using a lighter roast the marshmallows to desired brownness
  8. Place a scoop of ice cream on the cookie. Place another cookie on top to sandwich it.
  9. Freeze or serve right away.
  10. Decorate with chocolate. I dipped some in chocolate and drizzled chocolate on others.

You probably have just about everything you need in your pantry and freezer so you can make these today! If you don't these are easy to find ingredients you can pick up quickly. 

This store-bought sugar cookie dough makes it easy. Add the cinnamon and sugar and graham cracker crumbs as a topping and you can fool anyone that these are homemade! Well, that is, if you want to fool them!

Make Ahead S' mores Ice Cream Sandwich Tips

If you want to make these S' mores ahead and want them ready for a party, skip the toppings. Freeze the cookies with the ice cream in the middle and wrap them in wax paper or put them on a silpat baking mat on a flat surface in your freezer. 
Just before you serve your S' mores ice cream sandwiches, add your toppings.
