Triple Chocolate Stuffed Cookies

'Tis the season for cookies! I am pretty sure that's what they are talking about when they sing "it's the most wonderful time of the year." It's really all about the cookies. Baking cookies is such a fun Christmas tradition and having a nice selection of them around the holidays always makes for a quick and easy dessert when you have unexpected guests or carolers {people still go door to door and sing Christmas carols don't they?} drop in. You can complete your Christmas cookie tray for Santa with these yummy triple chocolate stuffed cookies.

Triple Chocolate Stuffed Cookies

Ingredients:

1 box chocolate cake mix
4 oz (1/2 brick) cream cheese
1/3 cup butter, softened
1 egg
20 milk chocolate squares
1 cup mini chocolate chips


Directions:

Preheat oven to 350F

Mix together cake mix, cream cheese, butter and egg. Stir in 3/4 of the mini chocolate chips.
Portion into 1 1/2 Tablespoon-sized balls {I used a cookie scoop to help with this}. You should end up with approximately 20 cookie balls.



Take one ball and flatten it in your hand. Place the milk chocolate square on top and fold the cookie dough around the pattie to cover it completely.





Repeat with remaining cookie dough.


Sprinkle the remaining mini chocolate chips on top - pressing down slightly if needed to keep them in place.


Bake in preheated oven for 10-12 minutes, until cracked and no longer glossy.

I feel like I have received a breath of fresh air in discovering you through Olivia at Randomolive. I am a beginner letterer who wants to letter to compliment my handmade card passion. I have no desire to become a professional. I, too, am a Purdue Consumer and Family Science (maybe you were in the midst of one of those name changes) and retired in 2013 after a blessed 37 career as a FACS teacher. I am also a Christ follower. I am ministered to daily by so many in our lettering community who express their faith through their lettering:)

You are too sweet! I'm so glad you found me then and hope you find inspiration here. I'm curious what you taught at Purdue. I was there from 96-2000. Loved my time there and really hope to encourage one of my kids to the school that my husband and I loved. Enjoy finding your way around my site!

I didn't teach there. My major was home Ec teaching and I taught home Ec in Indiana high schools for 37 years:). I'm looking forward to your blog!
