Healthy Grilled Chicken Bruschetta

Chicken is one of those favorite meats in our home but it can get a little boring. I'm always looking for new ways to serve this lean protein to my family but at the same time not over complicate it. This grilled chicken bruschetta recipe is a new favorite and is a great weeknight meal that doesn't take a lot of time to prepare.

Healthy Grilled Chicken Bruschetta

Ingredients: 

3 medium vine ripe tomatoes
2 small cloves of garlic, pressed or minced
1/4 cup chopped red onion
2 Tbsp fresh basil leaves, chopped
1 Tbsp EVOO
1 Tbsp balsamic vingear
salt and pepper to taste
1/4 cup shredded mozzarella
1-2 pounds of thin sliced chicken breast

Combine all your fresh ingredients {minus your cheese and chicken} together and set aside. It's best to let your veggies marinate to get the best of all the flavors so prepare this at least 20-30 minutes ahead of time. It's ideal if you have a few hours.

Season your chicken with some salt and pepper and grill on medium-high heat.

Once your chicken is cooked through, put it on a platter and spoon the tomato mixture on top. Sprinkle cheese on top and serve.

Your whole family will love this anytime of the year, but I love that it gives me a fun taste of summer if I eat it in the winter and in the summer I can use fresh home-grown ingredients, so it's a win win.
